    Bird feathers and burls inform New York restaurant by Polonsky & Friends

    New York design studio Polonsky & Friends has lined this tiny New York omakase restaurant with burl wood veneer panels, while its counters and cabinetry are coloured to resemble bird feathers.

    Designed as a sister location of Rosella, an East Village sushi spot that opened in 2020, Bar Miller is located a few blocks away in Alphabet City.
    The compact Bar Miller space seats eight covers around a counter made from rare Avocatus stoneThe owners brought back Polonsky & Friends to complete the interiors so that the two outposts could share the same “warm, welcoming energy”.
    Although the menu borrows from traditional sushi craft, it’s not authentically Japanese, so the designers wanted to steer clear of any tropes that might deceive customers.

    The restaurant only seats eight covers, which surround the open kitchen in the centre of the compact space.

    A custom ceiling pendant by Madrid-based designer Pablo Bolumar is suspended above the counter like a string of pearly beads.

    “We were able to sand back [the flooring] after it was hidden for years in the previous restaurant,” Polonsky said.

    Kelley also drew the icon for the sister restaurant, a western rosella, which has different colours in its plumage.

    The maroon hues in the wallpaper are echoed on the cabinetry behind the kitchen counter, differentiating the food preparation area from the blue-green of the dining space.
    Other details include a panel of vertical wood slats for storing plates above the sink and moulded-glass scones shaped like scallop shells.

    Space tourism informs design of Ichi Station sushi restaurant in Milan

    Valencian design studio Masquespacio has completed a dine-in restaurant for takeaway sushi chain Ichi Station in Milan, with interiors designed to resemble a futuristic spaceship.

    Set in a historic building in the Brera district, the chain’s latest outpost builds on the same travel and transport concept established across its other outlets – including eight in Milan and another in Turin.
    Masquespacio has designed Ichi Station’s Brera outpostBut Masquespacio wanted to take this idea to the next level for the new restaurant by drawing on the visual language of sci-fi and space tourism.
    “We proposed approaching the travel concept as a trip to the future,” said Masquespacio co-founder Christophe Penasse.
    “When you enter Ichi, it’s like entering a capsule-like spaceship travelling through light, where you will disconnect from reality in order to get in touch with the food.”

    Customers can pick up orders at the takeaway counterMasquespacio completely redeveloped the layout of the 80-square-metre site – previously another restaurant – creating a central dining area along with a tunnel where diners can observe some of the sushi-making process.
    A pick-up bar close to the entrance was added to separate the circulation routes of take-away customers and diners.

    “Some elements were incorporated to remind the customer of Japan, like the huge lighting circles, although we tried to avoid making typical references to Japan such as using wooden structures,” Penasse explained.

    The tunnel motif also informed the circular and cylindrical details that pop up throughout the space across seat backs, bar stools and decorative elements such as the circular feature light in the main dining area.
    “The shapes and forms give the project the futuristic look that it needed,” the designer said.
    Diners can also watch sushi being prepared at the counterMasquespacio opted for a simple and restrained material palette that includes glass and micro-cement, which was used along with fully integrated tables and seating to create a seamless look reminiscent of a spaceship.
    The restaurant’s custom-made furniture brings in another reference to transport design tropes. “You can recognise it as a reinterpretation of the seating in a station and especially on a train,” Penasse explained.
    LED light panels are integrated into the walls, ceilings and table topsThe interior is finished in neutral shades of beige and off-white but is cast in different vivid colours thanks to the LED lighting system that is integrated into the walls, ceilings and even the table tops.
    The lights alternate between shades of blue, green, purple and peach at variable speeds and, according to Penasse, create a veritable “explosion of colour”.

    Among them are two colour-block restaurants for fast-food chain Bun – a blue-and-green interior in Turin and a green-and-purple version in Milan.

    Hello Sunshine features “unlikely juxtaposition” of Japanese psychedelia and cabins

    A “psychedelic inverted cabin” provided Canadian studio Frank Architecture with the design narrative for this Japanese casual bar and restaurant in Banff, Alberta.

    Located in the mountains of Alberta, Hello Sunshine offers barbecue, sushi and karaoke in a retro-influenced space by Frank Architecture.
    Fireplaces sit at the centre of special tables at Hello SunshineThe team imagined an alternate reality, in which Japanese graphic designer Tadanori Yokoo ventured into the mountains and holed up in a cabin for years, and based the interiors on what the result might have been.
    “Taking cues from the unlikely juxtaposition of Japanese psychedelia meets spaghetti western meets mountain cabin, Hello Sunshine is bold, playful, and distinct,” said Frank Architecture, which has an office in Banff.
    The wood-panelled restaurant features a rounded bar at the backThe eatery is located in the middle of the town, which is a popular destination for tourists and winter sports enthusiasts and is laid out to offer a sense of discovery.

    “The spatial planning is intended to feel organic and meandering,” the team said. “Upon entry, the restaurant isn’t immediately visible but is slowly revealed as one moves through space.”

    Blue corduroy fabric is used to cover banquettes, while the booth seating is tucked into a niche formed by angled walls covered with timber shingles.
    In the karaoke rooms tucked away at the back, patterned carpet, lava lamps and disco balls add colour and sparkle to the wood-panelled spaces.

    “The result is a bold and encapsulating space that surprises and delights guests with unexpected moments and distinctive style,” said the team.

    For another spot in the Western Canada metropolis, the team drew inspiration from author Truman Capote to set a 1960s vibe at Major Tom on the 40th floor of a downtown skyscraper.

    VSHD Design creates “intriguing and mysterious” interior for sushi restaurant Origami

    Emirati studio VSHD Design has completed a dark and dramatic interior for a restaurant in The Dubai Mall, featuring a pared-back palette of natural materials chosen to reflect Japanese minimalism.

    Origami is a sushi restaurant, whose first outpost opened in Dubai’s Jumeriah neighbourhood in 2014.
    VSHD Design has designed the Origami restaurant in The Dubai MallFor its second branch, the owners asked VSHD Design to create a space that provides a unique experience within the cookie-cutter environment of a shopping mall.
    The studio, led by interior architect Rania Hamed, used materials such as textured grey plaster, matte-black tiles and low lighting to create an atmosphere that evokes the underground sushi bars found throughout Japan.

    The interior features monolithic columns and walls informed by the architecture of temples, along with seating covered with draped fabric and textured glass partitions that contribute to the feeling of “intrigue and mystery”, the studio said.
    Six-metre-thick columns frame the restaurant’s entranceThe restaurant is entered through the gaps between a number of six-metre-thick columns, designed to enhance the sense of separation between the mall and the main dining room.
    A small retail space on one side of the entrance hosts a concession selling chocolates while on the other side, a low bar area with wooden stools and a glass-block counter provides a waiting area for diners.

    “The solid shop front facade made of rammed-earth clay and glass bricks evokes a feeling of intrigue meant to draw people inside,” said VSHD Design.
    The narrow entrance also limits the amount of natural light entering the dining room, which helps to maintain the dark and intimate feel.

    The studio’s projects in Dubai include a gym that references brutalist architecture and underground fight clubs, as well as a coffee shop with a curved ceiling and boulder-like counters.

    Frank Architecture creates intimate setting for Calgary's Lonely Mouth noodle bar

    Canadian studio Frank Architecture has designed a Japanese restaurant in Calgary where wood panelling, low lighting and corduroy-upholstered chairs all contribute to a cosy atmosphere.

    The Lonely Mouth bar and restaurant is named in reference to the Japanese concept of kuchisabishii, which means “when you’re not hungry, but you eat because your mouth is lonely”.
    A screen of wooden dowels divides the bar and restaurants areas at Lonely MouthFound at the eastern end of Calgary’s 17 Avenue commercial strip, only a few blocks from Frank Architecture’s studio in the city, the bar serves udon made in-house and boasts an extensive sake selection.
    “Lonely Mouth is a place where tradition meets innovation,” said the team at Frank Architecture. “They offer a carefree and interactive dining experience, featuring a dynamic and playful menu with modern and energetic flavours.”

    “Inspired by Japanese minimalism, the interior takes a ‘less is more’ approach,” the team said. “The design is very restrained.”

    Rockwell Group takes maximalist approach to Japanese design at Katsuya NYC restaurant

    Elements of traditional Japanese architecture and design are combined and given a contemporary spin by New York studio Rockwell Group at this sushi restaurant in Manhattan.

    Katsuya is the latest restaurant of its name by chef Katsuya Uechi, following locations in Los Angeles, Miami and the Bahamas all serving sushi with a Californian twist.

    “The interior dining rooms take a maximalist approach to Japanese aesthetics, an entertaining departure from the contemporary minimalist vogue,” said the team.

Guests enter past the sushi bar and lounge, which is set up for casual diners to enjoy light bites in view of the kitchen.

    In the main dining area, the space is divided into three sections by a pair arched openings and a series of translucent glass screens subtly printed with images of wagasa – Japanese umbrellas.

    Rockwell Group models Casa Dani restaurant in New York on Andalusian patios

    A private dining room at the end of the hall-like restaurant features red-leather-backed chairs around a circular wooden table, which seats 10.
    In the warmer months, a terrace influenced by autumnal Japanese gardens will provide space for 98 guests outdoors.

    Rockwell Group was also responsible for the interior design of Citizens, as well as the other fine-dining option Casa Dani, which serves Andalusian cuisine in a setting to match.

    Oku restaurant in Mexico City features “floating tables” made of wood and steel

    Curved booths are suspended over a dining room at a Japanese restaurant in Mexico City designed by local firms Michan Architecture and Escala Arquitectos.

    The sushi eatery is located in the upscale neighbourhood of Jardines del Pedregal, across from a famed church known as Parroquia de la Santa Cruz del Pedregal.

    For the Pedregal location, the architects worked with another local firm, Escala Arquitectos. The team aimed to elongate the space’s proportions and take advantage of its height.
    The restaurant is Michan Architecture’s second of its kindRectangular in plan, the eatery has two levels. The lower level encompasses a sushi bar, indoor and outdoor seating, and a back-of-house zone.

    Additional seating is found upstairs, where a series of “floating tables” are arrayed along a corridor.

    Two of the tables hover above the sushi bar, and two extend over the outdoor terrace. Each has wooden walls that enclose a single booth.

    Above the mezzanine is a drop ceiling with curved cutouts that expose the steel framing and add height to the space.
    Moreover, the openings provide a “sensation of cutting and pasting the ceiling onto the tables”, the architects said.

    Stitched brick wall welcomes guests to Uchi Miami restaurant by Michael Hsu

    Masonry bricks are tied together to form a curved entryway at this sushi restaurant in Miami’s Wynwood neighbourhood, by Michael Hsu Office of Architecture.

    At Uchi Miami, the American firm aimed to create a “perfect contrast” between the materials, techniques and styles of Japan and Florida.

    “Wrapping, layering and stitching, inspired by native art forms, apply sophisticated design to simple objects to elevate ordinary materials found in daily life.”

    Other artist collaborations within the restaurant include a hand-drawn chalk mural of jellyfish by artist Sam Angus Jackson, found above the sushi bar.
